Friends, is there any way to prevent the customer from changing the email, and adding extensions?

Customer’s own email id ? If yes then admin can not stop to edit their own email id and for extensions admin can give the access to customer for particular extensions by roles and permission.

On the end user screen, is there any way to block the creation of extensions? Or at least the option to create extensions only with random numbers?

You can change the length for the extensions but can not block he creation and also no option to create only particular random numbers.
